In honor of 'Meat Free Monday," I want to share this yummy pizza recipe that I found over at VegWeb
Herb Crust Pan Pizza
Ingredients :
1 package active dry yeast
3/4 cup lukewarm water
1 tablespoon sugar
2 cups flour
2 teaspoons oregano
1 1/2 teaspoons basil
1 teaspoon garlic powder
1/2 teaspoon thyme
1 teaspoon salt
3 tablespoons olive oil
1 cup pizza sauce
toppings of your choice
Directions:
Mix the yeast with the lukewarm water and sugar and let stand 10 minutes.
Meanwhile, mix together flour, herbs and salt.
Add 1 tablespoon of the olive oil in yeast mixture and then pour it into the flour mixture. Mix until it is dough. Knead for 5 minutes. Add more flour if sticky. Let it stand 1 1/2 hours in warm, non drafty place.
When dough has risen, oil a deep dish 8-9 inch pan with the remaining 2 tablespoons olive oil.
Spread 1 tablespoon of cornmeal on a dry flat surface and roll out the dough till about 9 inches in diameter. Place in pan.
Add the sauce and toppings.
Bake at 425 degrees for 15-20 minutes.
Serves: 2-4

Vegan Chocolate Chip Cookies Recipe
I'm always on the hunt for amazing animal friendly recipes. I found this awesome twist on the traditional chocolate chip cookies recipe at Chooseveg.com
INGREDIENTS:
**ENER-G Egg Replacer is a brand-name powder mixture of vegetable starches that simulates eggs in baking. It can be used in recipes calling for unbeaten eggs, egg whites beaten stiff, and egg yolks. It can be found at Whole Foods as well as natural health food stores.
INSTRUCTIONS:
1. Combine flour, baking soda and salt in small bowl.
2. Beat butter, granulated sugar, brown sugar and vanilla in large mixer bowl.
3. Add egg replacer one at a time, beating well after each addition; gradually beat in flour mixture.
4. Stir in chips and nuts.
5. Drop by rounded tablespoon onto ungreased baking sheets.
6. Bake in preheated 375-degree oven for 8 to 10 minutes or until golden brown.
7. Let stand for 2 minutes; remove to wire racks to cool completely.

- 1 cup Earth Balance*, softened (although Earth Balance is the best, you may use any other non-dairy butter/margarine)

- 3/4 cup packed brown sugar
- 1 teaspoon vanilla extract
- Egg Replacer for 2 eggs**
- 2 cups (12-ounce package) semi-sweet chocolate chips
- 1 cup chopped nuts (optional)
